I thought it might be fun to start posting some of my (and Brandon’s) favorite recipes. As BTR said on his guest post last week, he does do most of the cooking (oops! or maybe that’s a win for me?) but I do have a few things I like to make! Let it be known up front that I am not a professional photographer, so take my word when I say something is yummy! Since BTR mentioned he liked my energy bites in his post, I thought that would be the perfect first recipe to share with you all! I made these for the first time last summer, and there are about a million different recipes for them on Pinterest. I just took the ingredients from a few different ones I liked and went from there! Dry Ingredients 1 cup oatmeal 2/3 cup toasted coconut 1/2 cup ground flax seed 1/2 cup chocolate chips Wet Ingredients 1/2 cup peanut butter 1/3 cup honey 1 teaspoon vanilla extract So I know these are “no bake” bites, but I buy my coconut untoasted so that does require some minor baking. I just put the coconut onto a baking sheet (on parchment paper of course, easier clean up!) and pop it in the oven at 325 degrees F for about 5 minutes. Keep a *close* eye on it, I’ve burned it on more than one occasion. :) After that, you literally just stir all of the ingredients together for this recipe! My “pro tip” is to mix all of the dry ingredients together first in one bowl, and the three wet ingredients separately in another bowl. This way everything gets mixed up really well and then the dry ingredients get coated much easier. And I usually use my hands to mix the wet and dry ingredients together, it’s so much faster than using a spoon. After mixing I put the whole bowl in the fridge for about 20 minutes before forming the individual balls. I use my OXO cookie scoop to help me make the balls, but it’s definitely not required. One recipe makes about 20-24 balls, depending on how you size them. And to be honest, I usually double the recipe. If I’m going to be going to the work already, I might as well get a lot out of it! Another “pro-tip” of mine is if you happened to be nursing you could add brewers yeast to the recipe. I would also increase the peanut butter and honey by a bit to offset adding another dry ingredient. I did this a few times and I didn’t notice a difference in taste! There are lots of different mix-ins you could use to make these even tastier. Seriously, search “no bake energy bite” on Pinterest and you will get no less than 548913648 awesome results. So there goes my first recipe post. It’s a pretty easy one and I hope you like it!
