Today I’m sharing one of our favorite snack recipes! It’s a no bake energy bite recipe, only has 7 ingredients, and takes less than 15 minutes from start to finish!

Everyone in our house loves this recipe (and I seriously mean everyone, the boys want to lick the bowl!) so they are on a regular rotation of our shopping list!

Dry Ingredients
1 cup old fashioned oats
2/3 cup toasted coconut*
1/2 cup ground flax seed
1/2 cup chocolate chips
* I buy sweetened coconut flakes and toast them in the oven prior to making the energy bites. I know, I know, that’s baking in a no bake recipe. :)
Wet Ingredients
1/2 cup peanut butter**
1/3 cup honey
1 teaspoon vanilla extract
**We make our own peanut butter using dry roasted peanuts and our Vitamix!
This measuring cup from OXO is the BEST measuring cup for sticky ingredients like honey and peanut butter!

Directions:
Mix all of your dry ingredients together in one bowl.
In a separate bowl mix together your wet ingredients.
Combine wet ingredients and dry ingredients and mix mix mix mix. Sometimes I use my hands to mix it all, which the boys think is hilarious and they love to help!
Once everything is combined, scoop out your bites! I love using this scoop (medium size) so all of them are uniform in size.
Store in the fridge.

Recipe notes:
Sometimes after mixing I put the whole bowl in the fridge to chill before making the balls. This helps them stick together a little more, but you can totally skip this step
You could use any kind of nut butter you want! Experiment and see what your family likes best!
Agave can also be used instead of honey.
Try other add-ins like chia seeds, dried cranberries, mini M&Ms!
