Mixed Berry French Toast Casserole
Mixed Berry French Toast Casserole - an easy and delicious make-ahead breakfast perfect for spring with mixed berries. Make the night before and bake in the morning.
Ingredients
- 1 loaf (about 10 slices) brioche bread, cubed
- 2 cups frozen berries (I get the Schnucks mix of strawberries, blackberries, blueberries, and raspberries)
- 6 eggs, lightly beaten
- 2 cups whole milk
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- ½ teaspoon cinnamon
Instructions
- Lightly grease a 9 x 13 baking dish. Place a layer of bread cubes evenly across the dish. Sprinkle half the frozen fruit over the bread. Top with the remaining bread cubes. Sprinkle the rest of the fruit on top of second bread layer.
- In a large bowl whisk together the eggs, milk, vanilla, brown sugar, and cinnamon.
- Pour the mixture evenly over the baking dish with bread. Cover and place in refrigerator for at least 1 hour, but overnight makes it even better!
- The next morning remove the baking dish from the fridge and let stand for 30 minutes. Preheat oven to 350°.
- Bake covered with aluminum foil for 30 minutes. Remove foil and continue to bake for 25-30 minutes, until center is firm and top is golden brown.
- When done baking you can top with fresh fruit if you want. Serve immediately, with powdered sugar or syrup.
Notes
I like using a thick brioche style bread because it soaks up the filling, but feel free to use whatever you think your family will like.
It's not necessary to thaw the fruit.
You can make this recipe the day of, but it's even better if you can make the day before and store in the fridge overnight!
Make sure to let it sit out for about 30 minutes on the counter before baking if you do make it the night before, you don't want your dish to go into the oven too cold.
#1 tip: this recipe pairs perfectly with a mimosa!
