If you’re looking for a dinner that comes together fast and still feels like something special, these ground pork lettuce wraps are for you. I’ve been making versions of this recipe for years, but partnering with Missouri Pork this season gave me the perfect excuse to perfect it. Pork is one of those proteins that just works for busy weeknights: it’s affordable, cooks quickly, and takes on flavor beautifully, which makes it an easy win when you’re trying to get dinner on the table without a fuss.

These wraps come together in about 30 minutes, and the sauce, a savory blend of hoisin, soy sauce, rice wine vinegar, and a little heat, is what really makes them pop. Crisp butter lettuce, crunchy water chestnuts, and shredded carrots round everything out so every bite has a little contrast.

Ingredients
- 1 tablespoon olive oil
- 1 pound ground pork
- 1 medium sweet or yellow onion, diced
- 3 cloves garlic, minced
- 1/3 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon hot sauce
- 1 cup shredded carrots
- 1 (8 ounce) can water chestnuts, drained and diced
- 2 to 3 green onions, thinly sliced
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 head butter lettuce, leaves separated
Instructions
In a small bowl, whisk together the hoisin sauce, soy sauce, rice wine vinegar, and hot sauce. Set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 3 to 4 minutes.
Add the ground pork to the skillet. Cook, stirring occasionally to break it into crumbles, until no pink remains.
Stir in the shredded carrots and cook for a few minutes, until just softened.
Add the sauce and garlic to the skillet, stirring to combine. Let it simmer for about 5 minutes so the flavors meld.
Add the water chestnuts, green onions, salt, and pepper. Cook for 2 more minutes, until everything is heated through and tender.
Spoon the pork mixture into butter lettuce leaves and serve warm.
