Even though both boys have April birthdays, I decided a Cinco de Mayo birthday party would be so much fun! So we are gearing up for a big birthday FIESTA at the end of the month and Brandon and I have been testing different recipes of food we want to serve that day. Clearly, there will be tacos. Lots and lots of tacos. And probably some margaritas.
While we will have traditional ground beef tacos at the party, I also wanted a chicken option. So we came up with green chile chicken taco boat recipe! That’s kind of a long name, just go with it.
Lately, I’ve been shopping with both kids during the day. I know, I’m a bit crazy, but it gets us out of the house and then home in time for long afternoon naps! If I put E in the top and Jude in the basket everyone seems pretty happy. As long as I avoid the toy section. :) Last week we headed to Walmart to get all the ingredients to test out our chicken taco recipe!
After texting BTR 398473 times to make sure I had everything, we came home and I got started on the prep. You start with your raw chicken breasts and then poke them with a fork a whole bunch. There might be a technical name for that, but I am unaware of it. Professional chef right here! #sarcasm
I then put the chicken in a gallon sized bag and added two cans of green chiles. I zipped that bag up, mixed it all around, and stored it in the fridge for a few hours to marinate.
So you could cook your chicken multiple ways (oven, grill, slow cooker) but we decided to use our new smoker!
And yes I needed BTR’s help with this part because the smoker still intimidates me a little.
He loaded them up on our Green Mountain Daniel Boone Smoker at 250 degrees.
After about two hours he checked the internal temp to make sure they were fully cooked (they should be 165 degrees) and then brought them inside.
I sliced the chicken into strips, but you could shred it too. Then you can get creative with your toppings! I filled the Old El Paso Mini Taco Boats with shredded lettuce and then the chicken. I topped the chicken with shredded Monterey jack cheese, diced tomatoes, avocados, and sour cream. But obviously, taco toppings are endless!
BTR and I both loved these tacos and can’t wait to make them for our fiesta in a few weeks! And even if the actual invite doesn’t say it, there will be margaritas with our tacos!
