Last week went to an Easter egg hunt play date with some of our favorites! The boys had so much fun playing and collecting eggs, and the mom’s enjoyed catching up (and corralling our kids).

Everyone brought snacks to share and I decided to make this Easter Bunny Munch for everyone! I think they liked it too because more than a few people have asked for the recipe!

This is such an easy treat to make and to include your kids in making! Jude and I grabbed the new kitchen helper BTR just built and got to work. Here’s what you need to make this treat!
Ingredients:
-12 cups popped popcorn
-3 cups pretzel sticks
-1 bag of Easter M&M’s (I didn’t use quite the whole bag, but you could!)
-14 ounces almond bark or white chocolate
-Sprinkles

So you could buy already popped popcorn at the store, but we have a ton of Boy Scout popcorn so I just popped it at home. I would say you need 2-3 bags depending on how good (or bad) you are at popping popcorn in the microwave. And you could totally use pretzel twists instead of sticks.

Mix together your popcorn, pretzels, and M&M’s. Don’t add the sprinkles just yet!

Next, you need to melt your almond bark. I bought this huge bag of it at Wal-Mart and used about 7 squares (2 ounces each square). If you plan on melting chocolate regularly you NEED these silicone measuring cups from OXO.

They make melting the chocolate so, so, SO easy. I start by melting it for 45 seconds in the microwave and then give it a quick stir. Then I melt in 30-second increments until it’s completely liquified. Make sure not to burn it. The honeycomb pattern on these cups makes it not hot so you can literally just grab the cup out of the microwave with your hand.

Take your melted chocolate and pour it over the popcorn mixture and start stirring. This is when I added the sprinkles so they would stick to the popcorn and not all fall to the bottom.

Once everything is coated with chocolate, spread it out over parchment paper on a baking sheet to harden. And try not to eat it yet. But I don’t blame you if you do sneak a bite!

Once the chocolate has hardened you can break it up into smaller pieces and store in a large covered bowl or individually package it. I used clear cellophane bags and tied them with a ribbon and bunny tag I cut on the laser.

I’m going to give these treats to a few of my mom friends, and I hope they don’t share with their kids! :)
