OXO recently sent us some new baking supplies (my actual dream if you know me at all) and I’m so excited to share a new muffin recipe with you today!

So I didn’t actually create this recipe (see ingredients and directions below), it’s from Sarah Sanneh, baker and partner of Pies ’N’ Thies in New York City! I had never baked with bran or molasses before, but this recipe was absolutely amazing and even my picky one (ahem Jude) loved them! Plus this recipe makes a ton so we shared with others!

We started out by shredding some zucchini on the new box grater and measuring it in the container that easily attaches to the bottom. I can already tell you this tool is going to get some use in our kitchen!


Next, we mixed up all our dry ingredients in a big bowl. Jude is a master measurer and pourer these days.

This adjustable measuring cup is pretty much a lifesaver when it comes to measuring gooey ingredients. And I know I’ve told you before, but melting butter in the silicone measuring cups is the ONLY WAY to do it!

So I bought these blackberries ahead of time since they were on sale and then I stored them in this OXO GreenSaver and I’m a total convert. It kept our berries totally fresh in the fridge! OXO if you’re listening, we need more of these!


Now I need to work on measuring a little more consistently into the muffins tins (I used my medium OXO cookie scoop to help), but regardless they cooked perfectly in my new non-stick muffin pan. I’ve sung high praises about the OXO metal bakeware, and this one is no exception. It perfectly cooks and is easy to clean!

Ingredients:
3 2/3 C flour
1 T baking soda
1 t salt
1 C bran
1 1/2 C butter, melted and cooled to room temp
3/4 C light brown sugar, firmly packed
2/3 C molasses
1 C shredded zucchini
3 C sour cream
1 1/2 C blackberries
Directions:
1. Preheat oven to 350 degrees.
2. Mix flour, baking powder, salt and bran together in a large bowl.
3. Mix melted room temp butter with light brown sugar, molasses, zucchini, and sour cream.
4. Mix wet into dry and gently fold in blackberries (try not to burst!)
5. Fill a muffin tin with batter and bake for 30 min.
