These days we’re all trying to use what’s in our pantry. And that’s why today’s recipe is perfect! I’m excited to be teaming up with Schnucks to share fun ideas, recipes, and hacks with things you probably already have in your pantry. And today we’re starting with this delicious recipe for peanut butter banana oatmeal bars!

Jude and I spent an afternoon in the kitchen (one of our favorite things to do together) and mixed all of this up in no time at all!

Now I know this recipe says “bars” but to me it was a bit more of a cake/oatmeal consistency. Either way it’s absolutely delicious and makes for an easy breakfast!

Don’t forget to grab an adjustable measuring cup to measure out the peanut butter. We mixed everything in our standing mixer, but you could definitely just use a whisk and a bowl.

Baked Peanut Butter Banana Oatmeal Bars
This baked banana peanut butter oatmeal makes for an easy and delicious breakfast!
Ingredients
- 2 ripe bananas
- 1 egg
- 1 ½ cups skim milk
- ⅓ cup peanut butter
- 2 tablespoons honey
- 1 ½ teaspoons vanilla extract
- ½ teaspoon cinnamon
- 2 cups old-fashioned oats
- ⅓ cup chocolate chips
- 1 teaspoon baking powder
- ½ teaspoon salt
Instructions
- Lightly grease an 8x8 pan. Preheat oven to 350°
- In a bowl (I used my mixer!) whisk together the banana and egg.
- Mix in the milk, peanut butter, honey, vanilla, and cinnamon.
- Mix in the oats, chocolate chips, baking powder, and salt.
- Pour the batter into the pan and bake for 40 minutes until the center is barely firm.
Notes
We sprinkled a few extra chocolate chips on top before baking! Use your best judgement, and by that I mean definitely add more chocolate chips ;)
